  1. Place apple peels, cores, and scraps in medium saucepan. Add enough water to just cover and bring to a boil; vigorously simmer 20 min. Add sugar and cook, stirring often, until all water has evaporated, 10 to 12 min.
  2. Pass mixture through food mill, then return to pan and cook on high, stirring often, until thickened, 2 to 3 min. Serve over frozen yogurt or pancakes or on toast.
