In kitchen, 2 lbs. of hot held shredded chicken in electric chaffing dish at 116-127 degrees. Operator states that approx. 1 hour ago it was removed from refrigerator and placed in hot hold unit. Education provided (corrected: pan was moved to flat top grill and reheated to 180 degrees as witnessed by inspector). In kitchen refrigeration, numerous incidences of cold held food product in coolers uncovered and Unprotected. In smaller flip top prep table, accurate accessible thermometer not found. In kitchen, cutting boards at 2 flip-top prep tables found with deep cut marks and stains. Several cutting boards in kitchen found similar condition. In kitchen and basement, all shelving found with food debris and smears, in a general unclean condition and poor repair. Inside flip top prep tables, dried food debris found on rims of prep top. In basement ice machine, ice slide found unclean. In kitchen, fronts and sides of all cooking equipment, all lower shelves of prep tables, insides of all refrigeration, and fronts and sides of dishwashing and 3 bay sink all found not clean. At start of inspection, kitchen handwash station was blocked and no paper towels/drying system available. In kitchen, all floor surfaces especially under and behind equipment found with heavy debris and food soils. Baseboards, corners and wall edges especially noted. At bar area, especially under and behind coolers and at wall edges, heavy debris and dropped service items found. In kitchen, hood vent over cookline found with accumulations and debris.
Elbridge Plaza Restaurant

Glass front, upright cooler in kitchen noted not working properly at this time and not able to maintain potentially hazardous foods at/below 45 degrees at all times. Container of mixed coleslaw at 50.6 degrees, container of cooked and cooled (whole potatoes) 48.9 degrees, and plastic storage container of 40-50 single portion cups of tarter sauce at 51.2 degrees stored in reach-in cooler for over two hours (corrected – discarded). Sample temperatures: macaroni salad 40.3 degrees, sliced ham and sliced turkey 40.5 degrees, raw hamburger patties 39.5 degrees stored in reach-in drawer coolers; cooked home fries 90.3 degrees cooling properly, uncovered in lower reach-in cooler; cooked meatloaf 157 degrees and cooked mashed potatoes 158.5 degrees noted resting on counter briefly and then placed in reach-in coolers, uncovered, to finish cooling. Mechanical dish machine equipped with chemical sanitizer noted not able to reach a minimum required rinse temperature of 120 degrees (repair required). Temperature gauge affixed to mechanical dish machine noted in poor repair at time of inspection. Dumpster noted with lids in poor repair (replacement required).
Flaming Grill & Buffet

Stuffed shrimp and salmon noted cooling on racked sheet tray at 62 degrees-room temperature storage. Large bowl of imitation crab noted in kitchen at 62 degrees for less than two hours and left unattended (corrected-prep product immediately and cook). Stuffed shrimp, French fries, deep fried chicken sticks noted on hot buffet at 109 degrees-133 degrees, 122 degrees, and 120 degrees respectively for less than two hours (corrected-return to kitchen and reheat to 165 degrees before service). At cookline with prep tables, knives and cleavers are stored in space between flip top coolers- not a clean sanitized surface. Gallon jugs cut and used for scoops-reuse of single service item. Walk in freezer is loaded with frozen food to the point that it cannot be entered – freezer cannot be inspected or accessed for proper cleaning. Many wet wiping cloths noted not stored in sanitizer following use. Interior of several white 30-gallon bulk storage bins noted not clean with old food soil. Several glasses covered chest freezers noted with dirty door gaskets and lids. Interior of white microwave oven not clean. Handle and exterior door of double door stainless steel freezer not clean with accumulated food soil from soiled hands. Most shelving throughout not clean with food soil. Hand wash sink in kitchen missing hand wash sign (corrected). Hand wash sink in kitchen not clean and contains food items disposed of incorrectly. Floor of walk in cooler noted with drippage from raw chicken (corrected). Drill with attachment for mixing found stored in bin of whole onions (corrected).
Inspector comments: Cookline prep tables all found with thermometers, Numerous TCS foods including raw chicken and fish, all 38-43 degrees. Deep fried shrimp off cookline temp’ed at 178 degrees. Large hot hold buffet with numerous TCS foods, (approx. 80 items) all 140 degrees and above. 2 large walk-in coolers found with thermometers and TCS contents all 45 degrees and below. Several large freezers with thermometers all found 28 degrees and below.
Ling Ling Buffet

Approximately 2 pounds of chicken BBQ stick noted on hot buffet at 120-145 degrees for less than two hours (corrected-reheat product to 165 degrees and re-serve). Tubs storing sheet pans and utensils not clean containing food debris. Some food pans found to be stacked before air drying. Sushi cooler lacks accessible thermometer. Cookline poly cutting boards noted with heavy stains and cut marks-poor repair. Dish machine racks noted in poor repair/worn. Ice slide at main waitress station ice machine noted not clean. Exterior and catch tray of rear beverage dispenser not clean. Fronts and sides of cookline equipment, interior of refrigerator on the cookline, upright refrigerators door handle areas, and lower shelving throughout kitchen-all not clean with accumulated food soil. Leaking water pipe near dish machine introduces water onto floor. Numerous fruit flies noted around beverage dispenser at rear wait station. Floor under cookline and along some baseboard areas not clean.

Preparation top cooler with no lid across from fryer units not able to maintain potentially hazardous foods at/below 45 degrees at time of inspection. Diced tomatoes 51.1 degrees, pico de gallo 49.2 degrees, guacamole 53.6 degrees, chickpeas 52.5 degrees, ranch dressing 51.6 degrees, Caesar dressing 51.6 degrees all stored in preparation top cooler for over two hours (corrected – all listed foods discarded). (All products in lower reach-in cooler noted at/below 45 degrees. Sample temperatures: raw chicken tenders 38.7 degrees at tender breading station; ranch 42.4 degrees, tarter sauce 44.0 degrees at cold service station; cooked rice 177.2 degrees, cheese sauce 181.6 degrees at steamer station; tuna salad 43.7 degrees at far corner prep top station; raw chicken 38.7 degrees in drawer cooler; crab dip 39.6 degrees on counter actively involved in preparation and later placed in walk-in cooler; alfredo sauce 37.5 degrees, wing dip mixture 39.1 degrees in walk-in cooler. Male food worker adjusted cooler settings and placed empty metal containers in top portion of preparation top cooler. Manager agreed to fill containers with water and monitor temperatures using probe/metal-stem type thermometer onsite, and have unit inspected/serviced as necessary. Equipment must be able to maintain potentially hazardous foods at/below 45 degrees at all times. Grease trap lid noted with spillage/residue on surface and not clean at time of inspection. Walk-in freezer floor under storage racks noted not clean.
